Popular Baja-style restaurant in NoDa adding second Charlotte location

The Ballantyne location will join a long-standing Cabo Fish Taco that's been open in the NoDa neighborhood since 2001.

A popular Baja-style restaurant concept already open in NoDa will soon bring its fish tacos and burritos to Ballantyne.

Cabo Fish Taco disclosed plans Thursday of opening a second Charlotte restaurant at 11625 N. Community House Road. It will be located next to a new Potbelly Sandwich Shop and in front of the Brigham Building in Ballantyne Corporate Park.

Cabo Fish Taco is slated to open in late fall, while Potbelly also is on track for a fall opening.

The Ballantyne location will join a long-standing Cabo Fish Taco that's been open in the NoDa neighborhood since 2001. The concept also has a location in Blacksburg, Va., and another spot coming to Roanoke, Va.

The brainchild of three Virginia Tech graduates, Gary Walker and husband-and-wife team Rob and Morgan Crenshaw, Cabo Fish Taco is known for melding coastal Mexican cuisine with a healthy California vibe. In 2010, it was featured on the Food Network hit show Diners, Drive-Ins and Dives.

The menu offers signature and specialty tacos, like the beer-battered white fish, grilled steak, BBQ mahi and lemon grilled shrimp, as well as a variety of wraps and burritos, including carne asada, shrimp, chicken and honey-wasabi tuna. There are also salads, dips, fajitas and quesadillas.

A variety of house-made margaritas as well as tequila, wine and beer round out the cocktail menu.

The new location will feature a "laid-back atmosphere, outdoor seating and a full bar with an extensive selection of specialty beers," according to a news release.

“Ballantyne is the ideal place to bring our signature Cabo experience,” Walker said. “We’ve been looking to expand in the Charlotte market for some time, and we know this thriving community is craving affordable cuisine with a festive vibe.”
